Amish Poppy Seed Salad Dressing

 

This is a delicious and easy poppy seed salad dressing

for which I have often been asked to supply a recipe.

 

Here is what you will need:

 

Combine:

 

1 and 1/2 cups sugar

2 teaspoons dry mustard

2 teaspoons salt

2/3 cup cider vinegar

 

Blend in a mixer bowl (best left to stand overnight).

 

Then add 1/4 to 1/2 cup light vegetable oil, (start with 1/4

then taste).

 

Beat for 5 minutes with electric mixer.

 

Then add 3 Tablespoons poppy seeds.

 

Blend on low for another 3-five minutes.

 

Chill and serve over favorite salad mixture.

 

Yield is one to two cups, keep cool.

 


Brenda's Potato Salad

 

 

So simple you won't believe it!  So good

you will have to believe it!

 

Here is what you will need:

 

8 large potatoes washed

6 hard boiled eggs shelled and chopped in large pieces

12 sweet gherkin pickles chopped in large pieces

1 large jar Marzetti's Slaw Dressing

 

Boil potatoes until tender but still firm.

Chill potatoes then carefully remove skins.

Cut into one inch pieces.

 

Place potatoes in a large bowl.

Add chopped eggs and pickles.

Pour half the slaw dressing over the

potato mixture and chill for an hour.

 

Add the other half of the dressing

to suit your own taste for consistency.

 

Sprinkle with paprika if desired.

 

That is all there is to it and it's just GREAT!

 

 


Seven Layer Salad

 

Nice variation!

Here is what you will need:

 

Lettuce(Tear into bite sized pieces)

Tomatoes(cut into bite sized pieces)

One medium sweet onion chopped

Cauliflower Flowerets(about 1 cup)

Shredded Cheddar Cheese(about 1 cup)

One Pound Fried, Drained and Crumbled Bacon

1 cup frozen green peas

 

In a large bowl, layer the above ingredients in order (0r

at least beginning with the lettuce).

 

For the dressing:

 

1 cup mayonnaise

2 Tablespoons sugar

3 Tablespoons Parmesan Cheese

 

Spread the mayo over the salad making sure it completely covers the

top of the salad like icing a cake.  Be sure it touches

the bowl all the way around to form a seal to the salad so no

air can get in.  Over the mayo, sprinkle the sugar and the

Parmesan cheese.

 

Refrigerate overnight.

 

Next day, toss and serve or serve as is.


7 Layer Summer Salad

 

Here is what you will need:

1 head iceberg lettuce torn in bite sized pieces

1 large sweet onion chopped

1 cups frozen peas, thawed and drained

1 pound bacon fried crispy, drained and crumbled

1 head cauliflower cleaned and cut in bite sized pieces

1 bunch fresh broccoli washed and cut in bite sized pieces

1 cup chicken breast meat cooked and cut in small chunks

 

1 cup mayonnaise

1/4 cup sugar

1/4 cup grated parmesan cheese

 

In LARGE bowl, begin layering

the above ingredients.

 

Combine the mayonnaise and sugar.

 

Spread mayonnaise over the top

of the salad mixture in the bowl

sealing the mayonnaise around the

top of the bowl. Sprinkle with

sugar, then sprinkle with cheese.

 

Chill over night.

 

Just prior to serving, toss all

ingredients together. Keep unused

portions chilled.
