Best Meat Loaf

 

 

This is the best I have ever had!  Very tasty!

 

Here is what you will need:

 

One pound lean ground beef

One half pound Bob Evans or Jimmy Dean's hot sausage.

One medium onion chopped

One medium green pepper chopped

2 large eggs

3/4 cup finely crushed Ritz Crackers

One cup catsup with one heaping tablespoon

brown sugar and one teaspoon hot sauce

mixed in.

 

In a large bowl combine all ingredients and one half the

Catsup mixture.  Mix well with fingers so that all

ingredients are incorporated.

 

Place into a loaf pan that has been prepared with a

non-stick spray.

 

Pat firmly into pan but do not pack tightly.

 

With fingers go along all edges so that the loaf

is about one half to one inch away from the sides

all around.

 

Pour the remaining catsup mixture over the loaf.

 

Bake at 350 degrees for one hour.

 

Drain, and allow to stand for 10 minutes before slicing.

 

You may want to make two because this one makes

GREAT sandwiches!

 


Chicken a la King

 

This is a cheesy version and is simply wonderful!

 

Here is what you will need:

 

1 10.8 oz of Pillsbury Grand’s Biscuits

 

3 Tablespoons margarine

 

3 Tablespoons all purpose flour

 

1/4 teaspoon salt

 

1/8 teaspoon pepper

 

1 and 1/2 cups milk

 

2 cups frozen mixed vegetables cooked and drained

 

1 and 1/2 cups cubed cooked chicken

 

1 cup pasteurized processed cheese spread (Cheese Whiz)

 

Bake biscuits as directed on package

Meanwhile, melt margarine in medium saucepan over medium high

heat.  Stir in flour, salt and pepper.  Gradually add milk

stirring constantly.  Stir in vegetables, chicken and cheese.

Cook and stir until cheese is melted and mixture is smooth and

heated through.  Split biscuits in half.  Serve mixture over

hot split biscuits, makes 5 servings.

 

 


Etouffe

 

This is a Cajun delight.  My thanks to a former co-worker, Wendy F.

 

Here is what you will need:

 

1 pound boned chicken, cubed

1/2 pound hot Italian or Cajun sausage

1/2 pound shelled and de=veined shrimp

 

Cook the above until done. The sausage may be

cooked in the microwave, the chicken sautéed

and the shrimp if not cooked can be boiled.  Set aside.

sauté the following until soft and golden:

 

1 chopped medium onion

1 to 3 cloves of garlic, chopped (the amount is according to your taste)

2 large stalks celery chopped

1 green pepper chopped

 

Add the meat mixture and one 8 oz of tomato sauce and cajun spices

to taste.

 

 

Prepare one package Cajun style rice or other type you like.

 

The meat mixture can be served over the rice or it can be

mixed together if you prefer.

 

I like to add a few pinches of sugar to cut the acid of the

tomato sauce and I do like to blacken the chicken and shrimp

with Cajun spices when I cook them.

 

There are lots of variations on this recipe and I am sure you

can customize it to suit your taste for spices and heat!

 


Maria's Lasagna

 

When she shared this with me, I said, "Now Maria,

there is NO WAY this will work!"  She just smiled

and said, "Try it, Wendy, just try it!"  So I

did and she was right, not only did it work, but

now my husband gets homemade lasagna instead of

frozen or worse…my OTHER version!

 

Here is what you will need:

 

One package lasagna noodles

One pound lean ground beef

One half pound Italian sausage

One medium onion

One 2 cup package shredded mozzarella cheese

One pint ricotta cheese

One egg beaten

Your favorite pasta sauce

 

Brown the ground beef, sausage and onion in a skillet.

Drain excess fat and liquid.

 

Drain the ricotta cheese and beat in the egg.

 

In a 9x12 baking pan, spread a thin layer of sauce.

 

NOW HERE IS THE BEST PART...DO NOT COOK THE LASAGNA NOODLES!

 

Yep, BELIEVE IT!

 

Place one layer uncooked lasagna noodles slightly over

lapping in the baking pan.

 

Spread with some of the ricotta mixture.

Sprinkle with some of the meat mixture.

Sprinkle with some of the mozzarella cheese.

Drizzle with sauce.

 

Next layers are done exactly the same way until

you have a top layer with noodles only.

 

Cover top layer with sauce.  Then cover pan with

foil and place in the fridge over night!

 

Next day when you plan to serve, pop into a

pre-heated 350 degree oven from 20-30 minutes

and that is ALL there is to it!

 

Thanks Maria, this is a REAL time saver.  Hated

boiling those stupid noodles!

 

Maria says you can do this with any lasagna recipe

because there is a chemical reaction from the ingredients

which pre-cooks the noodles while in the fridge!

 

 


Mexi-Beef and Noodle Skillet Supper

 

This is so fast and easy you won't believe how good it is! Here is what you will need:

1 lb extra lean ground beef

2 cups uncooked medium egg noodles

1 11oz can whole kernel corn, drained

1 cup sliced green onions

1 cup water

1/2 cup thick and chunky salsa

1 8oz can tomato sauce

(Optional) shredded cheddar cheese for topping prior to serving

 

In a large skillet, brown beef and drain.  Stir in all remaining

ingredients (except shredded cheddar) and bring to boil.  Reduce

heat to simmer and cover.  Simmer for 10-12 minutes until noodles

reach your desired doneness while stirring occasionally.

 

I like to top with the shredded cheddar just before serving.

 

Makes 4 12 oz servings.

 


Pasta Pie

 

 

This is really good and every easy, hope you will enjoy it!

 

Here is what you will need:

 

2 cups cooked and drained pasta (your choice, I like to use

medium spaghetti)

 

1 pound ground beef browned with one small chopped onion

and 1 small green pepper chopped. Season with salt and pepper

to taste. Then drain completely.

 

1 small jar of your favorite pasta sauce.

 

1 cup shredded mozzarella cheese.

 

1 egg beaten

 

Lightly grease a 9" pie pan.

 

Pour beaten egg over the cooked pasta and toss gently.

 

Press pasta into the pie pan until it looks like a crust.

 

Sprinkle half the cheese over the pasta.

 

Add browned meat mixture.

 

Cover with half the remaining cheese.

 

Cover with pasta sauce (just enough to cover the meat well.

 

Bake in 350 degree oven for 15 minutes or until bubbly.

 

Remove from oven and sprinkle with remaining cheese.

 

Let stand until cheese has melted slightly from the

heat of the pie.

 

Cut into wedges and serve with favorite salad and warm

garlic bread.

 

 

 

 

 


Sweet & Sour Chicken Kabobs

 

These are wonderful on a grill, indoors or out!

 

Here is what you will need:

 

MARINADE

1/2 cup soy sauce

1/4 cup oil

1 Tablespoon brown sugar

1 teaspoon garlic salt

 

 KABOBS

2 whole boneless skinless chicken breasts

1 can pineapple chunks drained (save juice)

2 green peppers cut into large bite sized pieces

1/2 cup of the reserved pineapple juice

1 teaspoon dry mustard

2 teaspoons ground ginger

1/4 teaspoon freshly ground pepper

1 can whole water chestnuts

8 firm cherry tomatoes

8 large mushroom caps

 

Combine marinade ingredients in small saucepan.  Simmer 5 minutes.

Cool.

Cut chicken into bite-sized pieces.

Marinate pieces for one hour stirring occasionally.

Drain and reserve marinade.

Thread chicken pieces, pineapple chunks, green pepper pieces,

water chestnuts, cherry tomatoes and mushroom caps alternately

onto four metal skewers.  Grill or broil 20 minutes basting

with reserved marinade.

 

Serve warm.

 

These are wonderful served over seasoned rice.

 

Remember to discard any remaining marinade as the raw chicken

was in the mixture.  This should NEVER be used as a dipping

sauce.

Terena's "Mexican Style" Lasagna

 

My friend Terena is always coming up with something fast,

easy and very tasty!  This one is NO exception.

 

Here is what you will need:

 

8 large flour tortillas

1 pound lean ground beef

1 can re-fried beans

1 small onion minced

1 package taco seasoning for meat

1 two cup package shredded cheddar cheese

2 large jars thick and chunky salsa (heat is your preference)

Sour Cream

 

Prepare a 9x12 glass baking dish with a non-stick spray.

Pre-heat oven to 350 degrees.

 

Mix the minced onion into re-fried beans and heat slightly in

microwave to soften.

 

Brown ground beef in taco seasoning according to package directions.

 

Place two of the flour tortillas on the bottom of the baking dish.

 

Spread 1/3 of re-fried bean mixture over tortillas.

 

Sprinkle with 1/3 meat.

 

Sprinkle with 1/3 cheese.

 

Drizzle some salsa over cheese.

 

Next layers are the same until you have a top layer with

tortillas only.

 

Pour salsa over entire lasagna.

 

Bake in pre-heated oven for 30 minutes.

 

Serve warm with drizzled salsa and a dollop of sour cream if

desired. May garnish with shredded lettuce, fresh tomatoes

and shredded cheese.
